There are several tasting menus to choose from (as well as à la carte), but it's worth the splurge to partake of the surprising and satisfying wonders that come out of the kitchen: from spaghetti with mussel powder, to scallop and razor-clam ceviche, to prime wagyu beef with hazelnuts, to red shrimp carpaccio with oyster emulsion.
