If you're seated in the dining room, go for broke (literally) with Cowboy Star's elevated steakhouse fare—the $200, 12-ounce Miyazaki filet Chateaubriand is flown in from Japan and aged 24 days. At the bar, though, keep it low key by sampling the small plates instead, like the grilled wagyu skewers, or a platter of fresh, sweet PNW oysters.
